Spicy Asian Chicken Wraps

I'm loving a new blog.   It's great and hosted by two ladies from Andover, who happen to be former classmates of a friend of mine from the Y.  Another food lover, Claudia, told me about this blog while we were in deep discussion about Top Chef.  Seriously that's what we talk about at work.  http://www.wearenotmartha.com/.  Check it out.  Anywho, this next recipe is from this site, and I will review it during the week, but this one in particular I am looking forward to making.

Ingredients;

2 & 1/2 oz. bean threads (or cellophane noodles)
1/4 cup low sodium soy sauce
1/4 cup minced fresh cilantro (is there a better smell than fresh cilantro?  I don't think so)
1 T chile paste w/garlic
2 t sesame oil
2 cups cooked chicken breasts chopped up
12 large Boston lettuce leaves
1 t minced ginger

Prepare noodles as directed, rinse them with cool water and chop them up.  Combine cilantro, soy sauce, sesame oil, ginger& chile paste in a large bowl.  Add noodles & chicken to mixture and stir well.  Take about 1/3 cup of mixture and put in middle of lettuce leaf.  Roll it up and eat it.  That's it.  When I make it I may cook the ginger with the chicken.  I'll let you know when I review it.

Baked Shrimp with Tomatoes

This looks so easy and delicious, can't wait to try.

Ingredients;

1 3 oz. piece french breas baguette
1/2 cup finely chopped fresh parsley
2 garlic cloves minced
2 T butter divided
2 T olive oil divided
1 & 1/2 lb. large shrimp peeled and deveined
1/2 t salt
1/2 t black pepper
2 medium tomatoes cut into 1/4 inch think slices
 2 T balsamic vinegar

Preheat oven to 450.  Place bread in food processor pulce until fine.  Measures about 1 & 1/2 cups.  Combine breadcrumbs, parsley, and garlic.  Heat 1 T butter & 1 T oil in large skillet over medium heat.  Add breadcrumb mixture, cook 3 minutes or until golden brown.  Coat 13 X 9 inch glass abking dish with remaining oil.  Arrange shrimp in single layer, spinkle with a little salt & pepper, followed by breadcrumbs and top with tomatoe slices.  Sprinkle remaining salt & papper, then remaining breadcrumb mixture.  Dot with remaining butter.  Bake for 12 minutes or until the shrimp are done.  Drizzle with vingear.  Yields 6 servings., which should be about 5 shrimp each, 1/4 cup breadcrumb mixture & 2 slices of tomato.

Calories per serving 364, fat 16.5 g, sodium 563 mg. 

Thai Coconut Chicken

I am posting this weeks recipes in advance of making them, then will update them with a review.  All are from the January edition of Cooking Light, which I happen to really enjoy.  So here goes.

Ingredients

1 cup light coconut milk (not easy to find by the way)
1/2 cup lower sodium soy sauce
2 T fresh lime juice
1 T grated peeled fresh ginger
2 t Thai chile paste
1/2 t sugar
2 thinly sliced shallots
4 6 oz. chikcne breasts
salt & pepper

Mix first 7 ingredients and reserve 1/2 cup.  Pour rest into a zp lock bag with chicken and marinate for 2 hours.  Heat grill pan over medium high heat, coat with cooking spray.  Remove chicken and discard marinade.  Sprinkle chicken with a little salt, add to pan and cook 7 minutes on each side or until done.  Serve with reserved coconut sauce.

Since it's from Cooking Light it's pretty healthy.  Here are the facts.  Yields 4 servings, calories 205 per serving, fat 5.2 g, sodium 510 mg.  This months Cooking Light has 25 different ways to cook chicken breasts.  I'm sure we can all use some new ideas for chicken, I know we eat it at least twice per week.  Review to follow later.

Weekly Menu 1/2/11-1/9/11

It's weird writing 2011.  Just thought I'd start off with that.  So, like most people, we are kicking off the new year with a healthy start.  Hopefully we stick to it and stay aay from the Ben & Jerry's.  One of the major problems is I really love cooking and not everything I make is all that good for us.  So, I have been perusing websites, magazines, etc and have come across quite a few new recipes I am excited to try.  I will be updating you all regularly on how they go, contain yourselves, I know it's exciting.  You living vicariously through my cooking, you know who you are.  Remember we frequntly have leftovers, just give me a shout and you can try some.

Sunday-Hmmmm...haven't figured this out and haven't done food shopping either so we'll see.

Rachel now has a lisp, but it's cute.  I do think her teeth are going to take forever to come in since they haven't event broken the surface yet.

Everyone leaves Santa milk and Cookies, but those in the know leave him the good stuff.

The Manger

Allen's family has had a manger since he was a kid.  The same manger, which we now have.  This year we let Rachel set it up, and she did a fantastic job.

There's a sheep with only 3 legs.  Just thought I'd tell you.  Sometime we mess with it and put Ewoks or Meerkats in it just to see if people notice.  Most of the time they don't.  Since Rachel set it up we left it alone.  I'm not making any promises for next year.

More Christmas

Rachel wore a beautiful blue sweater dress with offwhite tights.  Very stylish.

Alex was thrilled with his new Red Sox hooded sweatshirt.  That boy loves hooded sweatshirts.

Christmas Fun

What a great day!  It was a great morning followed by an excellent afternoon into the early evening with my brother & his family.  Santa spoiled us all.  Here are some of the pics.

Driving to Barrington can be a bit much for the little lady and she fell asleep.  Actually she announced she was going to but we honestly thought she was kidding, five minutes later she was out like a light.

This is hard to read but it always cracks us up when we drive by.  There's a nudist colony in Barrington.  Seriously what do they get 6 weeks of warm weather a year.


Darren got PS3 for Christmas and all the guys huyddled in the living room playing most of the day.


Rachel and Alex brought the DS's so they were entertained as well.

Bean Dip

Generally when we are invited to a party I am asked to make one of my usual recipes, this is one of them.  Normally it's bean dip, spinach dip, bruschetta if it's winter time, firecracker shrimp or potato salad if it's summer.  For tomorrow I am making bean dip and spinach dip, you're all in luck.  Now posting these recipes may back fire on me because you all will start making them and then I will have to come up with something else to make.

Ingredients

1 can each of the following

black eyed peas
black beans
diced chilis
diced tomatoes
corn

also;

medium diced onion
diced green pepper
diced red pepper
1 T. garlic powder
1 small bottle fat free italian dressing

Mix everything together, the night before.  This is key it has to set and the flavors mingle.  Serve with tortilla chips.  There you go, now you know how easy it is and how little I slave to make it.  Even if you all start making it I'm still bringing it to parties so there will be 2 of them.

Fudge Crinkles

Made a few things for tomorrow's Christmas party at JoAnne's.  This is the first. 

Ingredients;
1 box devil's food cake mix (Betty Crocker works best)
1/2 cup vegtable oil
2 large eggs
confectioners' sugar

Directions

Mix 1st 3 ingredients together, stir by hand, until dough forms.  Dust hands with sugar and shape dough into 1" balls.  Roll balls in sugar and place 2 inches apart on ungreased cookie sheet.  Bake 8-10 minutes at 350 degrees until center is just set.  Remove from pans after a minute or so and cool on wire racks. 

These were easy.  My oven is funky so they needed a couple extra minutes and then I think I left them in about a minute too long.  They are not as chewy fudgy as they should be.  They are still good and they will still be eaten I am sure.

Funny Kid

While out shopping on Black Friday, inthe afternoon mind you, I didn't bring anyone with me when I was standing in line at Target at 3:30 am., I snapped this picture of Alex, because, well he's a goof ball.

Oh Christmas Tree!

Our tradition over the past few years is to buy a real Christmas tree Thanksgiving weekend.  We've purchased at the same place for the 3 years (over by Texas Roadhouse for those of you who are curious).  For the most part I think we've did well, the trees have been nice and we've only spent around $40.00.  We went over today to pick up the tree so it could sit overnight, with intentions of decorating it tomorrow.  We picked out a beauty of a tree, a Fraser Fir, we were told and then were told it was $80.00.  I mentioned I didn't have that on me only $50.00 so we would need to go to the ATM (really we were leaving, I was not spending $80.00 on a tree that will be by the curb in 5 weeks.).  We went back to the car and one of the guys from the lot came over and knocked on the window of my car.  It's Christmas, you can't leave without a tree you can have it for $50.00.  Sold!  Now according to Wikipedia it's the most popular type of tree for Christmas.  News to me, but it is gorgeous.  Here's a pic before we decorated.

Earrings

If you remember Rachel got her ears pierced over Memorial Day weekend.  That was in May, exactly 6 months ago.  When her ears were pierced they told us to leave the earrings in 6-8 weeks then they could be changed.  No dangly earrings or loops for at least 6 months.  With the exception of two incidents where the earring were either ripped out (not fun) or just fell out, Rachel's have not been taken out.  This was her choice.  She had no interest in letting us change them.  And for that matter has given us an extremely hard time cleaning them and whatnot.  It's gotten better, but still she was more than happy to leave the little pink gem stones in. 

This past Black Friday we ventured to the mall and stopped by the piecing pagoda.  While there we noticed them switching out another little girls earrings.  Apparently they do that if you buy the earrings there.  All of a sudden Rachel was interested.  It's fine for a complete stranger to change the earrings but not Mom or Dad.  Fine by us, we bought her a pair of dolphin earrings with little diamond specks on them and the girl at the Piercing Pagoda changed them.



Nantucket Cranberry Pie

I decided I wanted to bake a pie for Thanksgiving.  Originally I had planned on making a pecan pie but being that I am the only one who would have eaten it, probably was not the best choice.  Then I happened across this recipe.  Rachel and I made it Wednesday afternoon and let me tell you it was a big hit on Thanksgiving.  Not too sweet, a nice tang from the cranberries and the crust was to die for.

Ingredients


■Butter, For Greasing

■2 cups (heaping) Cranberries

■¾ cups Pecans, Chopped (measure, Then Chop)

■⅔ cups Sugar

■1 cup Flour

■1 cup Sugar

■1 stick Unsalted Butter, melted

■2 whole Eggs, Lightly Beaten

■1 teaspoon Pure Almond Extract

■¼ teaspoons Salt

■1 Tablespoon Sugar For Sprinkling

Preparation Instructions

Preheat oven to 350 degrees.



Generously butter a cake pan or pie pan. Add cranberries to the bottom of the pan. Sprinkle on chopped pecans, then sprinkle on 2/3 cup sugar.



In a mixing bowl, combine flour, 1 cup sugar, melted butter, eggs, almond extract, and salt. Stir gently to combine.



Pour batter slowly over the top in large “ribbons” in order to evenly cover the surface. Spread gently if necessary.



Bake for 45 to 50 minutes. 5 minutes before removing from oven, sprinkle surface with 1 tablespoon sugar for a little extra crunch.



Cut into wedges and serve with ice cream or freshly whipped cream.

Weekly Menu 11/21/10-11/27/10

So last week was great, stuck to the menu and stayed on budget food shopping, two major pluses.  This week is obviously focused around Thanksgiving, so the beginning of the week will be easy meals.  I am on vacation Wednesday-Sunday so I will be working some long hours on Monday and Tuesday.  Even more reason for easy dinners that Allen can start before I get home.

Cutting Down a Tree

This past Veterans Day, when it was like 60 degrees out, we should have been raking the 400000000 leaves in our yard but I was being a brat and didn't want to .  Of course Allen jumped on that opportunity and decided to cut that tree down that was bugging him.  Now he's taken a couple down in the past, usually I leave the house when he does it and remind him to have his phone handy so he can call 911.  This time, for some reason I stuck around, that will teach me.  Well, it was a comedy of errors, and thankfully our kind neighbor, Mike came over to rescue us or well, we'd probably still be out there.

It started simple enough, Allen used his chainsaw to cut a chunk out, tied his ride on lawnmower to the tree (yes you are reading correctly) and planned on pulling it down.  The oak tree had other ideas and while he was cutting flexed back and caught the chainsaw up so it wouldn't move.  This is around when Allen enlisted my help.  Bad idea.  He's going to cut from the other side, with some other saw while I drive the mower.  Only problem is you need to be 100 percent in the seat for the mower to move but I can't reach the brake unless I sit on the edge.  Switch over to the Jeep, Mike is now in the yard helping, they are cutting from all angles, several ropes are now hooked up and instead of falling over the stupid tree snaps and jumps foward. 

Now it's hung up on another tree.  Back to trimming branches, sections of tree, more ropes, saws, driving the Jeep (you should see the hole in our yard), it's getting dark, it's getting cold out, the thing won't come down.  Finally, finally, it falls over, lands on our wood pile, half sticking over the fence into Mike's yard.  Allen finished cutting it up and I went in the house.  Not of course before I took some pictures.  Need to preserve this moment in photographic history.

these are just a sampling of the leaves we should have been raking.  By the way, raked on Saturday for a few hours, did about 5% of the yard and filled 15 bags.

Happy Anniversary Mr. Bigglesworth

So just about 2 years ago we adopted our 3rd cat (yes we are becomming crazy cat people), Mr. Bigglesworth.  He's become a part of the family, he's totally chill and lovable.

Weekly Menu 11/14/10-11/20/10

Not bad last week, ended up eating out Friday and Saturday which was a nice treat but we will be staying in this week.....oops just forgot we are going out this Saturday as well.  So much for a budget.  Food shopping this week went great only spent $100 and that included the turkey for Thanksgiving, which is now taking up the majority of my freezer.

Spicy Oven Fried Chicken

Another new recipe to review.  This one was good, very easy, it may have been great but I was suffering from a serious head cold and really couldn't taste it.  However Allen thought it was great, so we will try it again at a later date.

Ingredients

1/2 cup buttermilk
1/3 cup hot sauce
1 cup crushed cornflakes (crushed cornflakes, not 1 cup of cornflakes then crush them)
1/2 cup flour
chicken

Mix the buttermilk and hot sauce together.  In another bowl mix the cornflakes and flour.  Dip the chicken in the wet mixture then the dry, place on a cookie sheet.  Once all chicken pieces are coated spray each lightly with some cooking spray.  Bake for 35 minutes in a 375 oven.

This was good.  I made once piece of chicken in just buttermilk and the dry mixture for the kids then mixed in the hot sauce and made the rest for Allen and myself.  Will make again soon.

Props!

Haven't done one of these in quite a while, that's too bad, apparently no one is wowing me.  Well a few people recently did so I felt the need to share. 

First off, Bada Bing in Methuen square.  Great pizza, and calzones according to Allen (I beleive him).  I would say on par with Stachey's which is not easy to be.  Nice selection of stuff, fries weren't so great but everything else was.

Second Choice, the Used Book Store on Rt. 28 in Salem,  Formerly home to Furniture World, nice to see something move in that lasted more than a week or so.  Extremely reasonable prices on books (both hard & soft cover), DVD's, and VHS tapes. 

Party Connection caterers is the last prop I'm giving out.  They recently catered an event at the Y, appetizers only, which were great and at an amazingly cheap price.  The setup-take dow staff were fantasic, they set up a ncie spread, not just throwing some chaffing dishes on a table like most places we hire (it was festive with little pumpkins and fall colored leaves).  Remember you eat with your eyes first (at least that's what everyone on the Food Network says).  Anywho give them a shot if you are looking to cater an event.

German Style Pot Roast Recipe

Made this last evening for dinner.  Came out good, nice different spin on a pot roast or roast beef.  It was easy too which is always nice.

Ingredients

1 cup ketchup
12 oz. dark beer
3 lb. roast
salt & pepper
1 Tbl. brown sugar

Preheat oven to 325.  Mix ketchup and beef together and pour over a well salted roast in a dutch oven or other type of covered casserole dish.  Bake at 325 for 2.5 hours.  Once done remove roast from pan and put on burner.  Add brown sugar and simmer for 10 minutes.  Slice and serve with sauce.

Weekly Menu 11/7/10-11/13/10

So last week was a mess, the good news is no take out, we used what was around the house regardless of how much we did not want to eat it (gotta love living on a budget-NOT!).  So I have perused the weekly flyers and the internet and have come up with the following for the next week.

Sunday-Either German Style Roast Beef (new recipe) or Baked Chicken
Monday-Spicy Oven Fried Chicken (new recipe) w/mashed potatoes & veggies
Tuesday-Honey Rosemary Chicken w/potatoes (crock pot recipe) (new recipe)
Wednesday-Punt Night-I am working late so Allen will have leftovers or whatever he feels like making
Thursday-Tamale Pie (new recipe)   decided not to make this, maybe hot dogs and mac & cheese or something else easy.
Friday-Baked ravioli & spinach w/garlic bread
Saturday-Pork Chops some way or another

So a lot of new recipes, which means new posts.  Need to make sure we have easy back up meals on hand so we don't buy take out if some of these tank.  Pretty confident  in all of them except the tamale pie-looks interesting but not sure how it will go over in the Becotte household.

Weekly Menu 10/31/10-11/6/10

Did an awesome job sticking to the menu or at least eating what was in the house.  Forgot during the planning stage that we had plans Friday night to go out for Allen's birthday but that ended up getting postponed so we just got some takeout.  Let's stick to the plan next week and stick to the budget.

So we have 2 new recipes (Chili & Irish Stew w/colcannon)  On a high from last week with the multiple new recipes that all came out great.  I just realized with the exception on Sunday we're not eating chicken, that is so not like us.  I may switch out the Mongolian Beef for Sesame Honey Chicken.  We'll see when I food shop and compare prices.

As you can see from all my changes it's not a good idea to make the menu before you food shop.

Slow Cooker Cabbage Rolls

I've never tried stuffed cabbage leaves,or as I found out last night golomki's, (you should have seen me online trying tolook up the spelling of that-I thought they were glumpky's-I'm not Polish).  These were awesome.  My only revision next time will be more tomato sauce, other than that they were perfect and according to Allen the 2nd best he's ever had.  I'll take 2nd best to an old Polish lady anytime.

Ingredients


12 leaves cabbage

1 cup cooked white rice

1 egg, beaten

1/4 cup milk

1/4 cup minced onion

1 pound extra-lean ground beef

1 1/4 teaspoons salt

1 1/4 teaspoons ground black pepper

1 (8 ounce) can tomato sauce

1 tablespoon brown sugar

1 tablespoon lemon juice

1 teaspoon Worcestershire sauce

Directions

1.Bring a large pot of water to a boil. Boil cabbage leaves 2 minutes; drain.

2.In large bowl, combine 1 cup cooked rice, egg, milk, onion, ground beef, salt, and pepper. Place about 1/4 cup of meat mixture in center of each cabbage leaf, and roll up, tucking in ends. Place rolls in slow cooker.

3.In a small bowl, mix together tomato sauce, brown sugar, lemon juice, and Worcestershire sauce. Pour over cabbage rolls.

4.Cover, and cook on Low 8 to 9 hours.

Oven Fried Parmesan Chicken

Trying a few new recipes this week so I will review each one.  This was a good one, chicken was very moist.  Even the kids ate it (they complained but they ate it).

1 clove crushed garlic


1/4 pound butter, melted

1 cup dried bread crumbs

1/3 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

1 teaspoon salt

1/8 teaspoon ground black pepper

1 (4 pound) chicken, cut into pieces

Directions

1.Preheat oven to 350 degrees F (175 degrees C).

2.In a shallow glass dish or bowl, combine the crushed garlic with the melted butter or margarine. In another small bowl mix together the bread crumbs, cheese, parsley, salt and pepper. Dip chicken pieces into garlic butter, then into crumb mixture to coat.

3.Place coated chicken pieces into a lightly greased 9x13 inch baking dish. Drizzle with remaining garlic butter and bake uncovered in the preheated oven for 1 to 1 1/4 hours, or until chicken is cooked through and juices run clear.

Halloween 2010

Weekly Menu 10/24/10/30

Going to seriously try and use up what is around the house this week, emptying out the cabinets and freezer.  Kind of bored making the same old thing all the time so adding in a couple of new recipes.

Sunday-Oven Fried Parmesan Chicken and some other stuff
Monday-Slow Cooker Stuffed Cabbage Rolls
Tuesday-Lemon Pasta Chicken
Wednesday-Breakfast for Dinner
Thursday-Not sure, there's more chicken in the freezer so probably that.
Friday-Tacos
Saturday-Crockpot Baked Chicken
