Apricot Chicken

I haven't had a good or even new crockpot recipe in a while.  This one is both.  Everyone liked it, actually Rachel said she didn't but I think she was lying just to be a pain.

The Ingredients.






--11 oz jar of apricot preserves

--1 t onion powder
--1 T dijon mustard

--1 T soy sauce

--1/4 t ginger

--1/4 to 1/2 t red chili flakes (optional)

--1 package of chicken.  I used frozen boneless chicken breasts.  The package was about 1.25 lbs.






The Directions.







-- Drop the chicken into your crockpot.

--in a small bowl, mix all the other stuff

--pour on top of the chicken





cover and cook on low for 6-8 hours.  That's it.  Super easy and it was very tasty.

Weekly Meal Plan 3/20/11-3/26/11

Last couple of weeks have been disasters spotted but a couplef great new recipes.  I've been working wacky hours, which means a lot of random meals.  This week looks a little better and I'm throwing in some crockpot meals to help keep away the take out monster.  No need to order if dinner is done when you walk in the door.

Sunday-Not sure, big meal day.  Maybe a roasted chicken or something else depends on whats on sale

Monday-Apricot Chicken (new crock pot recipe)

Tuesday-Chicken ala King

Wednesday-Chicken Souvlaki Pitas W/tahini sauce

Thursday-Either Pulled Pork or Beef Stronganoff (both crock pot meals)

Friday-???

Saturday-I am volunteering at the Auction so it's punt night for everyone else

Tandoori Spiced Chicken

This one was really good.  I was a little surprised Allen liked it as mich as he did, wasn't sure on the flavors.  Add in this one is very healthy and we have a winner.

Ingredients;

1 & 1/2 cups 2% reduced fat Greek yogurt
2 T grated onion
1 T grated ginger
1 T canola oil
1 t ground cumin
1/2 t ground red pepper
1/2 t ground tumeric
3 garlic cloves minced
4 chikcen breasts halved
1/2 t salt

Combine first 8 ingredients in a heavy duty zip lock bag.  Add chicken to bag, and marinate 2 hours turning occasionally.

Place a small roasting pan in oven, preheat boiler to high.  Remove chicken from bag and discard marinade.  Sprinkle both sides with salt.  Broil on lower third of oven for 15 minutes or until done, turning after 7 minutes.

Serves 4

Soft Tacos w/Spicy Chicken

I've made a bunch of new recipes lately so I'm posting all the good ones now.  This was very good, but I need to up the chipotle peppers next time.  This was was a bit too mild for us.

Ingredients

3 chicken breasts (boneless skinless)
1/2 t salt
1/8 t black pepper
1 bay leaf
1/2 t oregano
2 canned chipotle pepper in adobo sauce, finely chopped.  (it says to seed them but I didn't)
1 finely chopped red onion
1/2 cup white wine vinegar
2 T olive oil


Season chicken with salt & pepper.  Mix together bay leaf, oregano, chopotle peppers, onion & vinegar.  Allow to marinate for at least an hour or overnight (we did overnight).

Heat oil over med/high heat.  Saute chicken for about 10 minutes or until brown.  Flip and keep cooking until done.  Remove from heat and let it sit for a while.  Slice chicken and serve in tortillas with toppings of your choice.  We used cilantro, sour cream, salsa & cheese.  It was good, and best of all easy.

Kung Pao Chicken

Ingredients;

1 pound chicken cut into chunks
2 T white wine
2 T soy sauce
2 T sesame oil
2 T cornstarch dissolved in 2 T water
1 T hot chile paste
1 t white vinegar
2 t brown sugar
4 green onions chopped
1 T garlic chopped
1 can water chestnuts
4 oz. peanuts

I've made a couple different Kung Pao Chicken recipes of late, this is the best.  It's got a serious kick to it, but you can cut back on the chile paste and that will help.  We served it with white rice. 

Make marinade with 1 T wine, 1 T soy sauce, 1 T oil & 1 T cornstarch mixture.  Mix it all together and add chicken chunks.  Let it sit for about 30 minutes.

Mix remaining wine, soy sauce, oil, cornstarch mix, chile paste, vinegar, brown sugar.  Mix together then add green onion, garlic, water chestnuts & peanuts.

Remove chicken from marinade and cook on med/high until chicken is done.  Add it remaining ingredients let simmer simmer together until sauce thickens.

Day 7

Sunday was a long day, I crashed when I got home.  We slept in a bit on Monday and decided to go to Epcot for when the World Showcase opened.  The kids wanted to do a few more Kim Possible missions and Allen and I wanted to snack and drink around the World. Plus we had dinner reservations at the Garden Grill so it worked out perfectly.

We finally got to go to the American Adventure, something Allen and myself hadn't done in probably 20 years.  We got there early and the Voices of Liberty sang. 



And Alex was selected to be part of the show.



Which he was not thrilled about but he did chat her up.



These people can really sing.  And the movie/presentation after was great.  More to come in a bit.

Day 6 Daytona 500 Baby!!!!

Wow!  What an experience.  Definetly something to check off the bucket list.  We had a great day, long but great.  The track is amazing, it's so huge, I mean really it's enormous.  And we were sitting way up in the sky, on wooden benches (I still don't that having that many people on them is safe but no one asked my opinion).  But even though we were up with the birds we could see everything, it was great.  I actually think it helped since there is so much in the infield if we were lower we would have not been able to see the backstretch. 

There were a ton of accidents & cautions.  All of our favorites finished nowhere near the front of the pack, Trevor Bayne won, some 20 year old kid I'd never even heard of.


It was carzy foggy ont he way in.  And the traffic was insane.  It took about 4 hours to go from Davenport to the track.



It just goes and goes forever.  We didn't even have a chance to really walk around and check everything out.

Day 5 continued

After breakfast we did some Kim Possible missions then explored the World Showcase.  The kids did some pin trading and we met a bunch of charcters.

Another favorite of the kids, Mulan.  She was very chatty.  Alex said she's the best Princess because in the movie she kicks butt.

We rode Test Track, Soarin, Spaceship Earth (AKA the big golf ball), and visited just about every country.  Back to the house to swim, have some dinner and catch some sleep.

Vacation Day 5

We relaxed Friday evening went to bed early and got up at the crack of dawn to have Breakfast with the Princesses at EPCOT.  We had an 8:15 am reservation so we left the house around 7 am. 


Since we were up so early I was in dire need to coffee.  Disney now has ice coffee stands outside the ticket area.  Allen was kind enough to go get me one.

After that they had the Princess parade, all the little girls (and a couple boys-not Alex) walked through the restaurant.  Rachel wasn't thrilled by this, but she did it.



Next up Snow White, who was awesome.  She chatted up the kids before having pictures taken.



Alex is funny he chats away with the ladies, and Rachel is frozen is awe.



He thought she was pretty cool so he was good with the picture.  Rachel didn't know what to do (Snow White is her favorite.)



But she gave her one heck of a hug.
