Weekly Menu 1/24/10-1/30/10

So last week went great, until I got sick then we severely went off course.  Good part of that is I didn't get any take out, because I pretty much didn't eat.  Allen did, since it was the end of the week and we don't keep much in the house in the way of quick fixes like mac & cheese anymore, since we are trying to be healthy.  We'll try and stay on course this week.

Sunday-Pioneer Woman quick chicken strips & homemade oven fries
Monday-Chicken Fried Rice
Tuesday-Pork Chops etc.
Wednesday-stuffed peppers
Thursday-something in the crock pot.  Still have tons of meat left over from my last McKinnons shop so we'll make something work.
Friday-Chicken & stuffing bake
Saturday-Hmmmm.....we'll see.

Weekly Menu 1/17/10-/1/23/10

So last week started off strong and ended badly, with take out two days....darn it.  Good news is I was under budget on food shopping so that helped offset the take out.  Here goes for this week.

Sunday-Out to eat for my Bday with Bob & Gail-Olive Garden
Monday-Crock Pot chicken caccitore (doesn't seemed like it's spelled right)
Tuesday-Chicken Jambalaya
Wednesday-Crock pot Chili
Thursday-Beans & hot dogs
Friday-Chicken a la king
Saturday-Out to eat for my birthday...not quite sure where.

Baked apples with chicken Thighs-Recipe Review

I made this last evening for dinner, sorry no pics.  Overall rating very good, except one major thing, Allen and I have both come to the conclusion we don't like chicken thighs.  I would make this again with chicken breasts.  So here goes.

5 cups peeled diced apples (I used Braeburn)
1/4 tsp. cinnamon
1/8 tsp. nutmeg
one small diced onion
4 cloves garlic diced, crushed whatever
1/2 tsp. sage (next time I will use a little more)
salt & pepper
chicken

Mix first 6 ingredients and place in baking dish.  Sprinkle chicken with salt & pepper, put on top of apple mixture.  Bake at 475 until chicken reaches 165-170 internal temp.  This took about 40 minutes for me, more because the chicken was still partially frozen.  Remove chicken from dish, mash apple mixture serve together.  It was good, Allen thought so as well and said he'd like it again only with chicken breasts instead.  See that's what I get for trying to save some money.

Weekly Meny 1/10/10-1/17/10

So last week went very well.  Moved a couple around and still have the stew meat but am making that Sunday.  No take out, not even coffee (oops just remembered we got coffee today).  Here goes to next week.

Monday-Chicken Thighs with roasted apples & garlic (new recipe)
Tuesday-Chicken, apple & yam hash for me left over stew for Allen
Wednesday-Crockpot Texas Hash
Thursday-Scrambled eggs & sausage
Friday-Pork Chops
Saturday-Something from the array of food in the freezer

Next week proves to be interesting as Allen goes back to school.  The kids have basketball practice on different nights and I staff every other Tuesday.  We may be eating a lot of soup & sandwiches.

Props!

Big props going out to two local establishments.  First is one I have given props to before, McKinnons.  I went today (budget minded to boot), to buy meat for the next two weeks and not go crazy overboard,but also not have to eat chicken every night.  I managed to get meat to cover 13 dinners, and that includes steak for tonight, for just about $36.00.  Alright you math whizes what's that, $2.75 per night?  Take out the steak and you're looking at $2.40 per night.  Crazy!

Second props is Wichit on Union Street in Lawrence.  Phenomenal sandwiches.  I mean probably some of the best I've ever had.  They use only organic ingredients, and the sandwiches aren't your typical ham and cheese.  I've tried the Cubano (excellent), So Cal (really good) and my favorite The Antipasto (prosciutto, grilled asparagus, big slice of fresh mozzarella & balsamic glaze on a asiago focaccia.  It's heaven.

Weekly Menu 1/3/10-1/10/10

So we have some tried and true favorites.  Using the crock pot twice, we have some very busy week nights.  This will increase when Allen goes back to school in a week or so.  Plus I'm putting us on a serious budget so I'm trying to stretch meals.  Here we go.

Monday-Mongolian Beef & Stir Fry Veggies
Tuesday-Chicken, Rice & Peas
Wednesday-Southwest Crock Pot Chicken
Thursday-Tuscan Beef Stew
Friday-Beans & Hotdogs (see what I mean about a budget!)
Saturday-Hmmmm.....didn't account for Saturday in the food shopping.  Luckily there are both extra chicken and steak tips int he freezer so most likely it will be one of those.

The Blog is Back!

So I've slacked, seriously slacked.  No posts in over 2 months.  But I'm back.  Part of the New Year's resolution, minimum of 10 posts per month.  Back to posting the weekly menu too....contain your excitement.

I just ordered my new camera, a Canon Rebel XS 10.1 mp.  I also got a 430 EX II Speedlite flash and a snazzy backpack bag to carry everything, inlcuding the extra lenses I have already.  So you should start seeing a lot of picture posts once it arrives (probably late in the week).  Can't wait.

Allen and I are both on a weightloss journey and we'll be sharing our trials, tribulations and successes with you all.  This is more to keep up in line, if I say I'm posting about it then we best get our butts in gear and work on it.
