I've made a couple of duds, pea soup & roasted butternut squash soup.  The squash soup I will make again with some revisions.  I've tried pea soup twice, both times it was gross.  Not trying it again, sorry Allen you get to have it out of a can.  The new butternut squash soup I am making is below, I'll update next week or so after I make it.  Now off to the kitchen for more potato leek soup.

Season of the Soup

I have been making a bunch of home made soups lately.  Mostly because of the CSA, which is now over.  Need to use all those veggies.  Even though I started out of necessity and not wanting to waste all those vegetables, we've come across a few that we love and now I enjoy making a batch each Sunday.  It holds us over for lunches a couple of days and I send a container home with Gail each week.  I'm going to post the few that I've made with reviews and will update as we go.

Slow Cooker Sweet & Sour Chicken

Tried this the other night...very good.  Even the kiddos thought it was great.


1 cup chopped onion
1/3 cup sugar
1/3 cup ketchup
1/4 cup oj
3T cornstarch
2T soy sauce
1T fresh grated ginger
chicken cut into 1 inch pieces
2 8 oz cans of pineapple chunks in juice, drained
1 large green pepper chopped
1 large red pepper chopped
1 can slice water chestnuts

combine first 12 ingredients cover and cook on low for 6 hours or high for 4.  Serve over rice.  Yup that easy.

Mojito Marinade

It's starting to get warmer....I won't say warm because that's a lie.  So we re grilling quite a bit more and trying new recipes.  Here's one we are doing this week.


2 shallots
1/4 cup corse cut mint
1/4 cup rum
1 T lime zest
1/2 cup lime juice
3 T honey

1 T kosher salt
2 T canola oil
Put everything in a food processor, pulse until shallots are finely minced and there you have it.

Sloppy Joes

Could have swarn I posted this before, but I can't find it.  This isn't a meal that's in regular rotation as quite frankly it's not that good for you but we enjoy it from time to time.

1 & 1/2 cups ketchup
6T h20
3 T brown sugar
3t Worcestershire Sauce
3t yellow mustard
3/4t each garlic & onion powder
ground beef

So brown the ground beef, drain but back in pan.  Add all the other ingredients and bring to a simmer, basically just to warm through and mix the ingredients.  Easy week night meal.
