Celtics Night

I've totally procrastinated and didn't import these pictures from the Celtics game we went to several weeks ago.  Alex and a group of kids from the Y were able to play on the court at half time.  It was incredible.  I was fortunate to be able to go down with them and was actually kneeling on the Celtics court.  And I was standing next to Ray Allen for like a millisecond.  By the way if you think Shaq is big you should see him up close, he's HUGE!

This what Alex did during the whole game.  Every once in a while he'd ask when he was going to play then went back to his book.

He's ready.  He played great, showed how good he is at defense, the kid he was guarding didn't touch the ball all game.  Alex got a rebound and was able to take a shot.

According to Alex this was one of the best days of his life!



Because after playing onthe court they got to watch Lucky warm up and met him.  Alex now wants a trampoline for his birthday.


Kung Pao Chicken

Super easy, and tasty.  Try this tonight.

Total: 40 minutes


Yield: 4 servings (serving size: 1 cup)





Ingredients

2 tablespoons dark sesame oil

1 cup chopped onion

2 garlic cloves, minced

1 pound skinless, boneless chicken thighs, cut into 1-inch pieces

3/4 cup water

3 tablespoons lower-sodium soy sauce

2 teaspoons cornstarch

1 teaspoon brown sugar

1/2 teaspoon bottled minced ginger

1 to 1 1/2 teaspoons crushed red pepper

1 cup thinly sliced red bell pepper (about 1 large pepper)

1 cup snow peas, trimmed

2 tablespoons chopped unsalted, dry-roasted peanuts

Preparation

1. Heat sesame oil in a large skillet over medium-high heat. Add onion to pan; sauté 3 minutes or until softened. Add garlic; sauté 30 seconds, stirring constantly. Add chicken; sauté 3 minutes or until chicken begins to brown.



2. Combine 3/4 cup water and the next 5 ingredients (through crushed red pepper), stirring with a whisk until sugar dissolves. Add water mixture to pan; bring to a boil. Add bell pepper and snow peas to pan; cook for 2 minutes or until vegetables are crisp-tender and sauce thickens. Sprinkle with nuts.

I have to give a shout out to AAA Travel in Salem, NH.  In particular, Karen, who helped me out the other day.  I stopped by to prepurchase our Disney passes and ended up with a map of Orlando, driving directions from the airport to the house, a AAA parking pass for Disney, and a car rental that included a car seat for free.  Nice doing business with them!

So we now have Gail's old treadmill in our dining/all purpose room.  This was Allen's doing, not mine.  It was used the first week and now this is what has become of it.  The fat cat likes to nap on it.
