Veggie Quesadilla




Evey once in a while I get lunch from Mann Orchard. I don't think I've ever had anything that wasn't awesome. This past week I checked out the weekly menu online and swung by to pick up the Summer Squash quesadilla. It had someone name but essentially that's what it was. It came with a black bean & corn side salad for only $5.75 and let me tell you I wanted to lick the Styrofoam container clean it was that good. I knew it was something I could duplicate at home so I gave it a whirl today at lunch time. Please make this recipe at home, it is awesome.

Basically it's pepper & onion mix, some sliced zucchini & summer squash. Sauteed until tender, add in some fajita seasonings. Next brown a tortilla, sprinkle some cheese to hold it together, add your filling, top with a little more cheese and another tortilla. Flip it to brown the other side. For me that's always the tricky part when making quesadillas. Serve with side of black bean salad for more filler and there you go. Couple photos, because, well I like to take them.

Weekly Menu 3/29/09-4/4/09

Last week was a disaster, hardly ate anything I had planned, the new pasta dish was disgusting so we got take out, ended up going out to eat on Thursday. We will get back on track this week.

Sunday-Hmmmm..forgot to take anything out of the freezer this morning, so I'll be running to the store on the way home from work.
Monday-Shrimp & Pasta dish
Tuesday-Pork Chops, Veggies etc.
Wednesday-Ham & Scalloped Potatoes
Thursday-Cornflake Chicken & Veggies
Friday-Punt Night. I have Clubhouse Idol so I'll be at work until at least 8 pm and Allen is going out with the guys from his fantasy baseball league.

Weekly Menu 3/22/09-3/28/09

Did a fair job sticking tot he plan last week. Ended up grabbing subs from Nick's one night because well I just didn't feel like cooking. So this week is

Sunday-Steaks on the grill
Monday-New pasta dish which the name escapes me. I'll post the recipe later.
Tuesday-Chicken Quesadillas & Spanish Rice
Wednesday-Grilled Chicken & Rive (might flip Tuesday & Wednesday meals)
Thursday-some sort of casserole
Friday-Tips on the grill

Not bad, when I went food shopping I swung by McKinnons and with the exception of the steaks for Sunday and some hamburg didn't need to buy anything because I bought everything last week in bulk.

Bball Banquet



Another year of YBL (Youth Basketball League) done. This was Alex's last year in the 5-6 year old division and he made huge progress, excelling at defense and getting his very first game basket. Above are the 6 main players form the team, the Oklahoma Sooners, there were 4 other players but they hardly ever showed up. These 6 were great, we had great family involvement and it was by far the best season of YBL we've been had. Next year should be interesting, as we'll have kids in 2 different divisions.

Weekly Menu 3/15/09-3/21/09

Did a good job sticking to the plan last week. Substituted one meal for something else we had in the freezer so that's not bad, no take out, despite wanting sushi really badly.

Sunday-BBQ
Monday-Corned Beef, veggies etc.
Tuesday-Sloppy Joe's & salad
Wednesday-possibly left over corned beef if there's a lot left over or some sort of casserole
Thursday-Grilled Chicken & stuff
Friday-Pork Chops

By the way, I realize it's the time of year, but seriously corned beef is ridiculously expensive. It's not even that good, why does it cost so much?!?

Yard Clean Up Day 1







Sunday, despite my announcement that I wasn't leaving the couch, we decided to start yard clean up. the weather was beautiful so we couldn't pass it up. Normally we have a fair amount of winter clean up to do, but like most people, this year is really bad because of the ice storm. Alex helped alot, Rachel on the other hand wandered around and did, well, nothing.

This pile of tree limbs is one of 3 in the yard, not to mention we have 8 bags of twigs, sticks, pine needles etc at the curb with many more to follow.

Weekly Menu 37/09-3/14/09

I've been slacking with the menu. Not that any of you really care but Allen's likes to look and know what's for dinner so I'll keep doing it.

Saturday-Steaks on the grill, baked potatoes & green beans
Sunday-Chicken on the grill, other stuff
Monday-Chicken Ala King & Rice
Tuesday-Mongolian Beef stir fry
Wednesday-Bball Banquet so we're having pizza with the Smith family
Thursday-Cheesy Ground Beef Casserole or whatever it's called
Friday-Shake & Bake Pork Chops and other stuff

Today was a HUGE day for Alex (us to but the spotlight should be on him). The 3rd Annual Kimball Classic Bball Tourney. It's for the 5/6 year old division of YBL at the Merrimack Valley Y. Kids form all 3 Y's play each other and we give out Walt Kimball Sportsmanship Awards to one kid per team. This is Alex's 3rd year playing (he started when he was 4 ssshhh don't tell anyone). So it's his last year playing int he tourney.










He's definitely progressed and he's awesome at defense. He's made shots at the basket every game and they always seem to roll around the rim and fall off, not going in. Not today, because as Frank Kenneally told me the Kimball Classic is magic. Kids get their first basket here all the time. And today it happened. Alex got a basket. The crowd was on their feet and screaming. I had a tear in my eye I was so proud of him! Everyone knew he'd been trying so hard and the best part is it's all on tape. So I will be showing you all the highlight video!

I Baked!







So I'm not a big baker, I love to cook but bake well, not so much. When I do I usually get help from Betty Crocker or the like. We were going to Darren & Veronica's for dinner on Sunday and I was bringing dessert so I decided to bake. And by bake I mean something from scratch. It's a yogurt cake with an orange marmalade glaze. It was quite yummy! Had to throw in a picture of one of the kids.
