I've made a bunch of new recipes lately so I'm posting all the good ones now. This was very good, but I need to up the chipotle peppers next time. This was was a bit too mild for us.
Ingredients
3 chicken breasts (boneless skinless)
1/2 t salt
1/8 t black pepper
1 bay leaf
1/2 t oregano
2 canned chipotle pepper in adobo sauce, finely chopped. (it says to seed them but I didn't)
1 finely chopped red onion
1/2 cup white wine vinegar
2 T olive oil
Season chicken with salt & pepper. Mix together bay leaf, oregano, chopotle peppers, onion & vinegar. Allow to marinate for at least an hour or overnight (we did overnight).
Heat oil over med/high heat. Saute chicken for about 10 minutes or until brown. Flip and keep cooking until done. Remove from heat and let it sit for a while. Slice chicken and serve in tortillas with toppings of your choice. We used cilantro, sour cream, salsa & cheese. It was good, and best of all easy.
